When it comes to sweet treats having a good chocolate chip cookie recipe is always great to have. Over the years I have struggled to find that one recipe. I have always made cookies that have come out flat and tasting boring, this had then put me off making cookies. However one day I found the perfect recipe on BBC good food. It’s simple and doesn’t require that much skill to make (thank god!). With this recipe you are able to have soft, chewy cookies in less than 25 minutes and nothing is better than that.

Now when I started making this recipe I realised I didn’t have all the proper ingredients. I didn’t have light brown muscovado sugar, I had light soft brown sugar. I didn’t have vanilla extract, so I left that out. However even without them, the cookies came out great (if I say so myself!). Baking is about having fun and experimenting, so if you don’t have the exact ingredients it doesn’t matter, it’s about trying new things.
I have a thing when making these cookies, always use chocolate chunks if you can (as you can see I didn’t) they are bigger and give the cookie that professional look and really I just prefer them. However, the shop didn’t have them so I had to make do with chocolate chips (nothing wrong with these don’t worry) I just find them too small and I like lots of chocolate chips. So I did the next best thing I added 300 grams of chocolate chips rather than 200 and it worked out perfect.
A good tip to making cookies is to have a cookie scoop or an ice cream scoop. They are not expensive and they are a great way of making sure all your cookies are the same size. Of course, you don’t have to have one, simply using a spoon will work just fine. I just love using the scoop and it comes in handy when making cupcakes (it’s less messy!). I’m not a professional baker, I’m just someone who likes to bake and finding ways to make the baking process easier makes me happy. Seriously I don’t like recipes that make me think too hard (If you do that’s fine) I just prefer the simple route.
There you have it. A simple recipe for chocolate chip cookies. I seriously suggest you try this, because once you do you won’t want to go back. Plus you can always mix it up and instead of chocolate chips you can add fruit, other chocolate sweets, whatever you want. It’s a good base recipe for you to do what you want with.
