Strawberry Cheesecake. One of those classic recipes that everyone loves. However, I’m not actually one of those people who does.
Ok, so you’re probably wondering why make something you don’t like. I found when it comes to baking I love making things for other people, so that sometimes means I make things I don’t particularly like. But, I do always try the final outcome to see if it changes my mind. Mostly it doesn’t but you never no.
When I started looking for a recipe for this I actually struggled. I don’t know why or how I just couldn’t find a simple recipe I just couldn’t until finally, I did.
This recipe I found on the BBC Good Food site and it says “Strawberry cheesecake in 4 easy steps” and I have to admit, it was a super easy recipe. Below you will find a recipe sheet of how to make the recipe yourself.
So, like I said I couldn’t find a recipe I liked. Now, my boyfriend absolutely loves cheesecake and he is the type of person who prefers to have fruit puree on top of their cheesecake rather than fresh fruit. (He’s not a fan of fruit).
Now, I wanted to add fruit to decorate the cheesecake because this always makes it look better, so I was able to get my boyfriend to compromise and have fruit puree with fruit ontop. Looking for a recipe that was like this wasn’t easy, most recipes required some sort of gelatin mix or there was fruit mixed in with the cheesecake part. I wanted a simple puree mix to pour on top and finally, I found one.
This recipe can be changed to whatever you want. If you didn’t want digestive biscuits you can use another biscuit that you really like and as I have mentioned in the method of the recipe you can either use a food bag and a rolling pin to break up the biscuit or if you have a food processor you can use that as well. Whatever you find easier.
As well as changing the biscuit you can change the fruit as well. Maybe have raspberries or blackberries or even have a mix berries cheesecake. It all follows the same method.
Like the recipe states, this is an easy recipe and it seriously is. It is quick to make and put together, and really! the only thing that takes more time is when your waiting to set.
The image above is the cheesecake mix, a combination of cream cheese, icing sugar and double cream. That’s it!! I was surprised, I don’t know why, but I thought making a cheesecake was going to be hard and take ages and I was definitely wrong.
The puree that you have to make to go over the top is amazing. It is super easy to make and you don’t have to use it just for this recipe, you can pour it over your pancakes or waffles, it would be amazing.
This puree is a simple mix of strawberries, icing sugar, and water. It tastes like heaven and I probably could have just eaten this mix rather than putting it on the cheesecake because it was that good.
Look at that picture, seriously doesn’t that looking so good. Like I said I don’t like cheesecake but this looks so good I could actually eat it.
Now, I made my cheesecake in a spring cake pan, as this made it so much easier to remove the cheesecake from the pan. I left the bottom of the pan with the cheesecake because I didn’t want to mess the cheesecake up trying to remove it. (If you have an easy technique, I would love to know!!).
A really good tip for you come to decorate your cheesecake, is to remove it from the pan first and then pour the fruit puree over. That way it can run over the sides, and give it that great homemade look.
So, there was one problem when it came to this cheesecake. My boyfriend. He was really impatient, and he really wanted a piece of this cheesecake. So, because of this, I wasn’t able to allow my cheesecake to set overnight only for a few hours and it really does need to be set over night. It becomes firmer and tastes better. (Which my boyfriend told me that it really does taste better the next day, after he had a piece the day I made it, making a mess of my cheesecake) But he has learnt and if I make it again he will actually wait now (hopefully!)
That’s it, my simple and easy strawberry cheesecake and of course I try everything I make, I tried this. I didn’t actually mind it, but it’s not something I would choose to eat out of a row of desserts. However, my friends and family loved it and are asking for more.
