Chocolate Cookie Cup Cupcakes

Cookies and Cupcakes altogether to make a small tasty treats. Now that’s something I love and was excited to try.

I found this recipe when I was watching my daily Youtubers and I instantly new I needed to make it. I did and it was the best thing I have ever made.

Cupcake Jemma is a youtuber that creates all sorts of tasty cakes and treats, as well as having her own shop in London called Crumbs & Dollies. I followed her recipe along side her but to make it a little easier for you I created a recipe card for you to use to make these little creations.

So to actually make these you do need to get a mini muffin tray. Now I’m normally that one type of person that doesn’t have the pans needed and I just use what I have. But mini muffin trays is the one thing you do need. It allows you to make the treats you like in a bigger quantity but smaller size.

This recipe makes around 48 chocolate cookie cup cupcakes. That is quite a lot to make, so if you don’t want to make that much then half the dough and put the rest in the freezer, this way you can make more cookies another time.

Now another tip you should no is that the cupcake mix you make, is the amount needed to fill 48 cookie cups, and the mixture can’t be made any smaller than it already is. However don’t worry, I used what I needed and used the rest of the cupcake mixture into actually size cupcakes.

Making both of the mixtures are really quick and easy. Once the cookie dough is mixed, you need to measure out 15-17grams and roll into balls. You need to do this as it makes sure each one is the same size.

The next part is to create the indent, forming the cup shape. I actually had a wooden tool to do this, but if you don’t all you need is a small rolling pin and use the end to press the dough. Make sure to flour the rolling pin to stop the dough sticking.

Place the cookie cups in the fridge while you make the cupcake mix. That way the cookie will hold itself better.

Once they are baked you have to allow them to cool slightly before adding the icing. I was surprised mine turned out ok, I thought it was gunna be all messy and all over the place, but nope it was all good.

Top Tip: make sure you grease your tin before hand. If you don’t they will be supper hard to get out will fall apart. I no this from experience sadly!!

Now for the decoration. I kept this simple and added a simple buttercream icing on top and in the recipe card I have said you can use whatever icing you want. You can have any flavour or colour you want, whatever makes you happy.

If you want to make the icing I did, you need 100g butter, 225g icing sugar and 1 tbsp milk. Mix the butter until pale and fluffy, then add the icing sugar, mix for 5 mins and then add the other half of the icing sugar and milk and mix for another 5 mins. Place this in a piping bag and decorate the tops.

This icing recipe makes enough for 24 cookie cups, if your making the whole batch it is best to double the mixture.

You seriously need to try this recipe, once you do, you will be making them all the time. Plus it’s easy to make and really doesn’t take that long to do.
